Simple Summer Salad

Happy Monday! It’s officially summertime, which means I am eating lots of fruit, veggies, and a combination of both. I love eating fresh salads during the day. They keep me cool and I don’t feel bad if I have another plate. Here’s a quick and delicious salad that I’ve been making quite frequently. My boyfriend loves it and so does my family and friends. Prepare this dish if you don’t want the typical salad with lettuce or spinach, but still want the veggies and the tangy taste.

Serves about 4 people.

Ingredients: Summer Salad

2 1/2 cucumbers

1 pint of cherry tomatoes halved

1/2 red onion sliced

2 tbsp olive oil

Juice of 2 lemons

Handful of chopped parsley

Super easy, right? You can sprinkle a bit of salt too if that’s what you like. Enjoy the summer and all the tasty treats that come with it!
